Mexican Discada-inspired brunch, cooked on our trusty "Skottel"braai over a hardwood fire. Smoked pork belly, pork steaks, and beef short ribs. Aromatic peppers, garlic, onions, and spicy Jalapeño peppers. Essentially a meat-lovers stir fry! This is the real breakfast of champions!

Recipe Serves 4-6 (3 Hungry South Africans...)
∙ 400g Smoked pork rashers
∙ 800g Pork neck steaks
∙ 500g beef short ribs
∙ 2 onions
∙ 5 Garlic cloves
∙ 2 Bell peppers
∙ 1 Jalapeño pepper
∙ 250g Canned corn
∙ 800g Canned tomatoes
∙ Eggs
∙ Sour cream
∙ 250g Button mushrooms
∙ Salt & pepper
∙ 1 tablespoon Cumin
∙ 1 tablespoon Coriander
∙ 1½ Tablespoon dried oregano
