Vegetable chop is a popular and flavorful snack that originated in Kolkata, India. It is a delicious street food item enjoyed by many due to its combination of crispiness and diverse flavors. The dish typically consists of a spiced mixture of finely chopped vegetables, such as potatoes, peas, carrots, and sometimes beetroot, coated in a seasoned gram flour (besan) batter/breaded . This mixture is then shaped into patties or rolls and deep-fried until golden brown.
The dish reflects the culinary diversity of Kolkata and has become a beloved street food item not only in the city but also in other parts of India. Its versatility and flavorful nature make vegetable chop a delightful snack for those who enjoy the combination of crunchy texture and savory taste in a handheld treat.

About 15 to 20 depending on the size
For the roasted Masala
• Coriander seed 1 tsp
• Cumin seed 1 tsp
• Red chilli 2
• Fennel seed 1tsp
• Whole pepper 1 tsp

Other Ingredients
• Mustard oil 1 tbsp
• Panch poran ½ tsp
• Ginger 1 tbsp
• Green chilli 2-3
• Green Pea ½ cup
• Carrot 1 cup (grated)
• Beatroot 2 cup (grated)
• Boiled potato 3 medium
• Peanut 2 tbsp
• Chat masala 1 tsp
• Turmeric pwd ½ tsp
• Sugar ½ tsp
• Pepper powder ½ tsp
• Salt to taste
For the Slurry
• Maida 3tbsp
• Corn starch 1.5 tbsp
• Salt ¼ tsp
• Pepper pwd ¼ tsp

Method:
• Roast the whole spices , cool them and crush or grind them.
• To the mustard add panchporan, ginger and green chilli
• Add the veggies along with all the spices and peanut.
• Cover and cook later add the boiled and smashed potato and combine well.
• Add coriander and let it cool down completely.
• Shape them into oval.
• Dip in the slutty
• Then coat with the bread crumb / suji / powdered biscuit.
• Deep fry in the oil till crispy brown.
• Serve with sauce alongside tea
