Recipe
𝓘𝓷𝓰𝓻𝓮𝓭𝓲𝓮𝓷𝓽𝓼
Milk 80g
Yeast 4g
Prima Flour bread flour 300g
Milk powder 5g
Salt 5g
Sugar 32g
Egg x 1
Anchor Food Professionals SG 110g Whipping cream
Dried golden raisins 3 small packs or 100g
Perfect Italiano Perfect Pizza cheese 100g

𝓜𝓮𝓽𝓱𝓸𝓭
1) Activate the milk and yeast 2m / 37c / speed 1
2) Add the dry ingredients and mix 30sec / speed 2
3) Add the egg and whipping cream mix and mix 20sec / speed 2
4) Knead 4min
5) Add salt
6) Knead another 2 min
7) Remove the dough, shape into a boule and rest for about 30min
8) Shape into 6 rolls and roll out each roll, use the scrapper to cut the top half of the flatten dough into strips
9) Spread the shredded cheese and soaked raisins inside
10) Roll up into a cocoon wrapping the fillings inside rolling up to the cut strips.
11) Let the rolls proof till they rise to the rim of the baking tin (more than doubled)
12) Bake in pre-heated oven at 170c for 25min
13) Remove the bread halfway to glaze the egg wash

Tips : Line the entire baking tin, egg wash mid-way during baking
