🥣Ingredients (serves 2–3)
• 250 g conchiglie (shell pasta)
• 1 tbsp oil or butter
• 2-3 cloves garlic, finely chopped
• 200 g mushrooms, sliced
• 1 cup fresh spinach
• ½ cup cooking cream or light cream (optional, for creamy version)
• water (boiling pasta, cornflour slurry & Pasta)
• Salt & black pepper, to taste
• ½ tsp chili flakes & oregano
• ¼ cup grated Parmesan or any cheese (optional)
• 1 tsp cornflour (cornstarch) This helps thicken the white sauce without making it heavy ✨


👩🏻‍🍳Method:- 1. Boil the pasta:- Cook conchiglie in salted water until soft. Reserve some pasta water and drain.

2. Sauté mushrooms 🍄:- Heat butter or oil in a pan. Add sliced mushrooms and cook on medium-high heat until they release moisture and turn lightly golden.

3. Add garlic 🧄:-Add chopped garlic after mushrooms and sauté for a few seconds until fragrant (do not brown).

4. Add spinach 🌿:- Add fresh spinach and cook until just wilted.

5. Thicken the Sauce:- Add cornflour slurry with water or milk and stir continuously until the sauce thickens.

6. Pour in milk🥛:- Lower the heat and add warm milk. Stir gently to combine.

7. Add cheese 🧀:-Add grated cheese and stir continuously until it melts and forms a smooth, creamy sauce.

8. Season & flavor:- Add salt, black pepper, chili flakes, and oregano. Mix well.

9. Combine pasta 🍝:- Add cooked conchiglie and a splash of reserved pasta water. Toss well to coat evenly.

10. Serve:- Switch off the heat and serve hot.
