Here are three of my family's favorite St. Patrick's Day dinner recipes that are always a treat! These are tried and true and the best part is that they are easy and delicious. These require just a little prep, a little time and then a lot of enjoyment!

This is a complete meal if you want to add a baked potato to round it out, go right ahead. The main event is this brown sugar and mustard glazed corned beef brisket which is a grocery store brined corned beef without the brine and without the spice packet. I cut off some of the extra fat cap and then placed it in a baking dish then spread it with a delicious mix of brown mustard and brown sugar then slow roasted it in a low oven until it was tender and glazed. While it was resting I roasted off our hot cabbage slaw that is sweet and sour and a nice change from your typical warm cabbage that you normally have with your boiled New England dinner. I know you are going to love this zippy side dish! Lastly we love this cheddar bacon beer batter bread that is hands down so easy you won't even believe it! this gets a nice loft and rise from baking powder and a bottle of your favorite beer. Thick slices slathered with butter are a delicious accompaniment to the sassy sweet and sour slaw and the unctuous, fall apart richness of the sweet, mustardy glazed corned beef. What a great option if you observe St. Patrick's Day or any other day of the year! why is it so hard to find a brined corned beef in the meat case during the year outside of the month of March? I will never know! Get them while you can, the week after the Day so you can take advantage of sales and pop those in the freezer for later in the year, because, trust me, you will want to make this more than just once a year!
