In this video, Logee's horticulturist and third generation owner, Byron Martin, talks about the Australian finger lime (Citrus australasica). Also known as the caviar lime, this citrus tree is native to the rainforests of southeast Queensland and northeast New South Wales, Australia.

The Australian finger lime produces small, elongated citrus fruits that are prized for their unique texture and flavor. The limes have a thin, skin that is green, yellow, or red in color, and inside they contain small, translucent vesicles that look like caviar and have a tart, citrusy taste. These vesicles are used in a variety of culinary applications, including as a garnish for cocktails and as a flavor enhancer in salads, seafood dishes, and other gourmet cuisine.

The tree itself is relatively small and can be grown in a container or in the ground. Like any plant, the Australian finger lime does require proper attention and care to thrive. It is important to plant the tree in well-draining soil. Avoid over-watering, and fertilize monthly during the growing season with a balanced fertilizer. Prune in winter to shape and encourage new growth and be sure to protect it from frost. If you follow these simple guidelines and keep an eye out for any signs of stress or disease, your Australian finger lime tree should be relatively low-maintenance while producing an abundant crop of fruit.
