Hey guys! Sorry for the short hiatus. Today we're BACK with one of my favorite gut healing recipes - Low FODMAP BONE BROTH.

Why is bone broth so great for gut health, you ask: COLLAGEN.

Collagen is the most abundant protein found in the human body. It's one of the major building blocks for our skin, bones, muscles, joints, and gut lining. It's basically the glue that holds us all together. ;)

Those of us with digestive issues often develop intestinal permeability aka leaky gut which allows bacteria, toxins, and food molecules to pass through the gut lining and into places they shouldn't be. This triggers the immune system and causes allergies, food sensitivities, migraines, rashes and other skin problems. Collagen helps to repair these holes like spackle on a wall.

INGREDIENTS:

2-3 Rotisserie Chickens (carcasses only)
3-4 Carrots
3" Ginger
1 Lemon (peel only)
1 bunch Cilantro (stems only)
2 TB Apple Cider Vinegar
2 tsp Salt
1/2 tsp Peppercorns (ground black pepper okay)

Add water unto the fill line in your instant pot, then pressure cook on high for 2 hours. Next uncover and sauté for 1 hour until reduced. Strain and cool overnight. Finish by scraping the fat off of the top. Refrigerate for 1 week or store in the freezer for 3 months.
