The theme I chose for this meal was "Around the world", revisiting the places I have lived/visited.
Menu:
San Francisco Bay; Smokey seared scallops, fermented five grain risotto with a yeast and cheese sauce, herb pea puree, walnut and Guajillo Chile chimichurri, goat cheese stuffed pickled shallot
The Fatty Italian; Handmade egg pasta with tallow, lard, Parmesan, and butter sauce with hand-dried tomatoes
6 A.M. Operahouse; Pistachio Panna Cotta, thyme and lemon crumble, mint ice cream, drunk roasted nectarine jam, red currants, chocolate and meringue shards

The San Francisco Bay is a nod to the salty air and fresh seafood of the bay as well as the marriage of the modern atmosphere and the old-school vibes of the Bay Area street-corners. A light starter yet accented by the fermented grain and yeast and made vibrant by the kick of the Guajillo Chile, this dish recreates my memories for San Francisco onto a plate.
The Fatty Italian encapsulates the essence of Italy: freshly kneaded pasta dough, four types of fat, plenty of wine, and sun soaked tomatoes. My family and I were planning to travel to Italy about two and a half years ago. However, due to a sudden move to Australia, the trip was cancelled and my first trip to Europe disappeared. This dish represents foreign land and endless possibilities, capturing the innocent and warm feelings that imagination shapes, and presenting it as a rich and aesthetic dish.
6 A.M. Operahouse visually captures the sunrise at the Sydney Operahouse. Sunrise is a special time of the day, when the cycle of life begins and energy is poured onto planet Earth. This dessert combines my awe and disbelief upon visiting the Sydney Operahouse with the motifs and emotions that sunrise encompasses for me. The sun rises (represented by the panna cotta), as the light and shadow mingle on the walls of the Operahouse (chocolate and meringue shards), and the rays of light seep through the cracks of the building (vibrant currants and nectarine). This dish captures a magical moment at a magical location.
