Written Recipe - Instant Suji Appe
Prep time: 10-15 minutes
Cooking time: 30-35 minutes (including chutneys)
Serves: 3-4 people

Ingredients:
Appe
Batter (base)
JADA RAWA | जड़ा रवा 1 CUP
SOUR CURD | खट्टा दही ½ CUP
WATER | पानी ½ CUP
SALT | नमक TO TASTE
Veggies
GINGER | अदरक 2 INCH
GREEN CHILLI | हरी मिर्च 2 NOS.
CURRY LEAVES | कड़ी पत्ता 10-12 NOS.
CARROT | गाजर 1 MEDIUM SIZE
CAPSICUM | शिमला मिर्च 1 MEDIUM SIZE
ONION | प्याज़ 1 MEDIUM SIZE
OIL | तेल 1 TBSP
CHANA DAL | चना दाल ½ TSP
URAD DAL | उरद दाल ½ TSP
MUSTARD SEEDS | राई ½ TSP
CUMIN SEEDS | जीरा ½ TSP
ASAFOETIDA | हींग ¼ TSP
VEGGIE MIXTURE
SALT | नमक TO TASTE
Final Batter
FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED)
BLACK PEPPER | काली मिर्च A LARGE PINCH (FRESHLY CRUSHED)
WATER | पानी ¼ CUP (ADDED GRADUALLY)
BAKING SODA | बेकिंग सोड़ा ¼ TSP
For cooking
GHEE | घी AS REQUIRED
Method:
In a large bowl mix the semolina, curd & water, cover & let it rest for 10-15 minutes & meanwhile you can make the veggies mixture & the chutneys.
In a string / electric chopper add ginger, green chilli, curry leaves along with carrot, capsicum & onion, chop all the ingredients, you can also use a knife but chopper makes things quicker.
To give a quick tempering to the veggies, set a pan over high heat, add oil & let it get hot.
Further add chana & urad dal & cook them for a few seconds until they start to change their colour.
Add mustard & cumin seeds, asafoetida, chopped veggies mixture & salt, stir well & cool over high flame for 2-3 minutes then transfer the mixture into a bowl & let it cool down completely.
While the mixture is cooling down & the batter is resting, you can make the chutneys.
Once the batter has rested, stir well , add the cooked veggie mixture, fresh coriander, black pepper & mix again.
The batter will become thick at this stage so add the water gradually to adjust its consistency, the batter should resemble idli batter’s consistency.
Before adding the making soda set the appe pan over high heat & let it get moderately hot, then grease it with ghee.
Add baking soda to the batter & mix thoroughly.
Pour spoonful of the batter into each mould, cover & cook over medium low flame for 8 minutes.
Then take the lid off & flip the appe using a spoon, they should turn golden brown from one side, now cover & cook again for 2-3 minutes or until the other side turns golden brown as well, you can add more ghee if required.
The last 2-3 minutes of cooking can be done without the lid.
Once the appe turn golden brown from both the sides scoop them out & transfer onto a plate.
Your delicious, crisp from the outside & soft from the inside instant Sooji Appe are ready.
