Thank you for watching this cosy Christmas episode. This week I start making a homemade garland using things I've found in the woods, I baked traditional Swedish ginger cookies from an old book belonging to Guido's grandmother, we had a BBQ of salsiccia and homegrown vegetables outside and baked focaccia and bread with our neighbours in an old-fashioned wood-fired oven.
SWEDISH PEPPARKAKOR CHRISTMAS COOKIES RECIPE:
My recipe makes about 50 small cookies. Mix 3 and 1/3 cups flour with 1/2 teaspoon bicarbonate soda. In a pan or pot, gently heat 220g butter, 1/2 cup honey, 150g white sugar, 1 cup brown sugar, 1/2 teaspoon pepper, 1 teaspoon ground nutmeg, 1 teaspoon salt, 2 teaspoons ground cinnamon, 4 tablespoons ground ginger, 2 tablespoons fresh grated ginger, 2 teaspoons ground cloves, juice of half orange and 2 teaspoons vanilla extract until the sugar has dissolved. Leave to cool until caramel is warm, not hot, and then beat in two eggs. Pour caramel into flour and mix until combined. Refrigerate for two hours or overnight. Preheat oven to 180degrees C. Roll cookie dough into small balls and press down with fingertips to make flat discs. Cook for 12-15 minutes for a crisp cookie or 7-10 minutes for a fudgey cookie. Remember they will firm up a lot once cooled so best to take them out earlier rather than later to be safe. Enjoy dipped in tea, espresso or Vin Santo.
