RECIPE
Serves: 4 pax
Prep Time: 30 mins (without defrost time)
Cooking Time: 30 mins

Ingredients:
Frozen Pork Loin Chops 250g (2 pcs)
Frozen Chicken Breast 250g (2 pcs)
Cream Crackers 16 Pieces
Plain Flour 1/2 cup
Egg 1
Cooking Oil 1 Tbsp
Sesame Oil 2 tsp
Salt 1 tsp
White Pepper ½ tsp

Brine
Salt 4 tsp
Water 500ml
Baking Soda 2 tsp

Sauce
Green Peas 50g
Brown Onion 1/2 large
Tomato Ketchup 3 Tbsp
Vinegar 2 tsp
Sugar 2 Tbsp
Water ½ cup
Chicken Powder 2 tsp
Cooking Oil 2 tsp
Corn Starch 2 tsp

Potatoes
Potatoes 500g
Baking Soda 2 tsp
Cooking Oil 10g (for spraying)

Method:
1. Defrost pork and chicken (preferably in fridge overnight)
2. Pound pork and chicken chops to tenderize
3. Make brine by adding salt and baking soda to water
4. Soak the pork and chicken in brine for 15 mins

Prepare breading while meat is brining:
5. Crush cream crackers and put in a plate
6. Beat an egg and add 1 Tbsp of cooking oil in a plate
7. Place plain flour in a plate

8. Wash off brine and pad dry
9. Marinate pork and chicken with salt, white pepper and sesame oil, set aside

Prepare the sauce and potatoes while meat is marinating:
10. Slice onion
11. Add sliced onion to water, boil and add sugar
12. Add ketchup, vinegar, oil and chicken powder
13. Add greens peas
14. Mix corn starch with water & add to thicken the sauce. Set aside.
15. Scrub potatoes and cut into wedges with skin on.
16. Boil potatoes with baking soda for 10 mins, drain and set aside
17. Spray with cooking oil and air-fry (200C) for 15 mins

Bread and Air Fry the meat:
18. Coat marinated pork and chicken pieces with plain flour, followed by beaten egg then the crushed cream crackers. Set Aside.
19. Spray battered Pork and Chicken Chop with oil and Air Fry (200C) for 12 mins
20. Slice Pork and Chicken chops and serve with sauce and potatoes.
