Chef Varun Totlani - Masque's maverick head chef

Chef Varun Totlani joined Masque early on in his career. He has grown to lead the crackling team of chefs at the restaurant and create innovative tasting menus that change with the seasons and ingredients. He, like most of the Masque team, travels to experience food and forage for rare and local ingredients to bring them back to the Masque tables. His fun experimentations with fermentation are stuff legends are made of.
