Lobster Shrimp Bisque

Seafood Stock:

Lobster Shells
Shrimp Shells
2 Carrots
2 Celery Ribs
1/2 Sweet Onion
5 Garlic Cloves
4 Sprigs Thyme
1 Tbsp Tarragon or Fresh Sprig
1 Tbsp Salt
1 Tbsp Old Bay
1 Tbsp Slap Yo Mamma
1 Tsp Cayenne Pepper

Bisque:

4-6 Lobster Tails
1/2 lb Shrimp
1 Carrot
1 Celery Rib
1/2 Sweet Onion
4 Garlic Cloves Minced
3 Tbsp Butter
Thyme
Tarragon
1 1/2 Cup Sherry Wine
1 Cup Heavy Cream
2 Tbsp Tomato Paste
2 Tbsp Flour
Salt & Pepper
Old Bay
Olive Oil

Prepare Seafood stock by first rough chopping Carrots, Celery, and Onion. Add all in a large stock pot.

Add in all other ingredients in the list of the Seafood Stock. Bring to a boil, then cover and slow simmer for at least 30 minutes. Then set aside.

For Bisque, fine dice the Carrots, Onion, Celery and Mince the Garlic.

Cut Lobster Shells in half.

Place butter into skillet and a drizzle of Olive Oil, and add in Lobster tails. Season with Salt, Pepper, Old Bay, and minced Garlic.

Cook until Lobster turns pink, and remove from pan. Then add in Shrimp and cook for for a few minutes until pink, then remove.

Add in the Carrots, Onion, Celery, Thyme, Tarragon and sauté until tender. Then add in Tomato paste, and mix well.

Add in flour and mix until you no longer see the flour. Deglaze the pan with the Sherry Wine. Simmer and allow to reduce by half.

With the pot of broth, strain all the shells and ingredients. Add in the cooked veggie base and mix well. Bring to a boil.

Then add in cup of Heavy Cream and mix well. Allow the cream thicken the soup.

Remove the Lobster from the shells, and dice.

To plate, add Lobster broth in a bowl, Lobster meat and Shrimp. Drizzle heavy cream and garnish with Chives or Parsley.

Serve and Enjoy!
