King Ranch Chicken Casserole

Ingredients:

2 chicken breasts cut into small pieces
1 minced clove of garlic (optional)
1/2 of a chopped onion
1/2 of a chopped bell pepper
1 can cream of mushroom soup
1 can cream of chicken soup
1 can of Rotel (diced tomatoes with green chilies)
1 8 oz. bag of Colby jack cheese
13 corn tortillas cut into small pieces
2 tbsp. butter

Directions:

1. In a skillet on medium heat melt 2 tbsp. butter.
2. Add onions and bell pepper (and garlic if you want) and sauté for 5 minutes.
3. Preheat oven to 400°.
4. Add in chopped chicken breasts and cook fully.
5. Season with salt and pepper (I also added some Cajun spice).
6. To a large bowl add in chicken onion pepper mixture.
7. Add tortillas, both soups, Rotel, and 1/2 of the bag of Colby jack.
8. Mix until everything is combined.
9. Pour mixture into a 9x13 baking dish.
10. Smooth top and sprinkle the remainder of the cheese all over casserole.
11. Bake for 20-25 minutes until top is brown and gorgeous.
12. Enjoy!

I like to add a dollop of sour cream on top!
