Recipe
----------------------
Step 1: Pop Tart Crust
Ingredients
1 Box of your favorite Pop Tart flavor (we're using Wild Berry!)
8 tablespoons butter, melted
2 tablespoons white sugar

1) First, line your springform pan with foil. Add all the ingredients to the food processor then press the crumbs down into the springform pan in an even layer. Smooth out and bake for 10 minutes at 400 degrees.

Step 2: Cheesecake Filling
Ingredients
4 Wildberry Pop Tarts
⅓ cup fresh strawberries
⅓ cup fresh raspberries
⅓ fresh blueberries
1 cup white sugar
2 8 oz packs of cream cheese, room temperature
2 cups sour cream
1 cup white sugar
1 teaspoon vanilla extract
3 eggs

1) Scrape out centers of 4 poptarts and add to a bowl. Combine the strawberries, raspberries, and blueberries together in a medium saucepot over medium-high heat. Add sugar and scraped out poptart centers.
2) Cook down while constantly stirring and banging until a thick jammy texture is achieved, about 20 minutes. Strain out the seeds. Allow to cool.
3) Mix the berry mixture, cream cheese and sour cream together in a stand mixer on medium speed for about 2 minutes. Slowly stream in sugar and vanilla and mix for another 30 seconds. Add in eggs once at a time until fully incorporated.
4) Add cream cheese mix to the springform pan then place that pan inside the larger turkey pan. Add hot water to the turkey pan, reaching up about halfway to the springform.
Bake for 45-50 minutes at 325 degrees.

Step 3: Decorate, ya Dummy!
Ingredients
1 ½ cups Sour cream
¼ cup sugar
½ tsp “Wild berry” flavoring (or filling?)
Purple food coloring
Melted white chocolate
Blue food coloring

Pop Tart Cheesecake

1) Remove the cheesecake from the water bath. Combine the sour cream, sugar, and wildberry flavoring. Whisk until smooth and the sugar has dissolved into the sour cream. Add food coloring for desired color.
2) Change heat of oven to 450 and pour the sour cream mix over the top. Bake for another 10 minutes then remove and cool.
3) While cooling, combine white chocolate with blue food coloring, fill a small piping bag with it, and then chop up extra pop tarts. Top with finishing blue dashes and top with pop tart bits.
