Pesto Sausage Stuffed Shells

Using Beyond Meat Pesto Sun Sausage to make these easy but delicious stuffed shells

Ingredients
Olive oil
10.6 oz package of Beyond Meat Pesto Sun Sausage
1 zucchini chopped
2 tbsps minced garlic
8oz vegan mozzarella, we used miyokos
6oz jar of vegan friendly pesto, we used Sprouts vegan pesto
Jar of tomato sauce
Salt and pepper
Fresh basil
Large pasta shells, cooked, roughly 10-12

Directions
Heat a medium/large pan over medium high heat
Add in a little olive oil
Add in you garlic and sauté for 1-2 minutes
Pinch and crumble in your beyond sausage
Continue to crumble and cook until browned
Add in your zucchini and cook for 2-3 minutes
Add in your pesto and cook for 1-2 minutes
Add in you cheese and cook until melted
Turn off heat
Season with salt and pepper
Remove from heat to cool
Preheat oven to 350
Coat the bottom of a deep 9x13 baking pan with your half your tomato sauce
Fill each shell with a generous amount of sausage mix
Place into tomato sauce pan
Drizzle remaining pesto on top
Drizzle with more tomato sauce
Bake in preheated oven for 20-25 minutes until bubbly
Remove from heat
Let cool 5 minutes
Serve and enjoy!
