Một người cô lớn tuổi người Việt Nam đã dạy tôi công thức này. An Elderly Vietnamese Aunty taught me this recipe. She was cooking for a few of us some decades ago. I remember munching non stop so I had to ask her to share this secret recipe of hers. These spring rolls are crispy and delicious. Wrap them in lettuce and herbs such as Thai basil, plus some bee hoon (rice vermicelli), if you like, then dip into Nuoc Cham (Vietnamese dipping sauce) and it is truly unforgettable.

INGREDIENTS : Makes about 14 pieces
250 g chicken or pork
10 g wood ear / black fungus
30 g glass noodles
4 cloves garlic (20 g)
50 g carrot
50 g tapioca
oil for frying
Dipping sauce (refer dipping sauce video)
1 Tbs fish sauce
½ tsp white pepper
¾ tsp black pepper
1 tsp corn / tapioca flour
Vietnamese rice wrappers / spring roll wrappers(14 pcs)
Lettuce leaves (14 pcs)
Thai basil (7 sprigs)
Optional
50 – 100 g rice vermicelli (bee hoon)
Other herbs - mint, coriander, perilla

THÀNH PHẦN: Làm khoảng 14 miếng
250 g thịt gà hoặc thịt lợn
10 g mộc nhĩ
30 g mì giấy bóng kính
4 tép tỏi (20 g)
50 g cà rốt
50 g bột sắn
Dầu để chiên
Nước chấm (tham khảo video nước chấm)
1 muỗng canh nước mắm
½ muỗng cà phê tiêu trắng
¾ muỗng cà phê tiêu đen
1 muỗng cà phê ngô / bột sắn
Bánh tráng Việt Nam (14 chiếc)
Lá xà lách (14 chiếc)
Húng quế thái (7 nhánh)
Không bắt buộc
50-100 g bún
Các loại rau thơm khác - bạc hà, ngò gai, tía tô

BAHAN: Membuat sekitar 14 buah
250 gr ayam atau babi
10 g kuping kayu / jamur hitam
30 gr mie gelas
4 siung bawang putih (20 gr)
50 gr wortel
50 gr tapioka
minyak untuk menggoreng
Saus celup (lihat video saus celup)
1 sdm kecap ikan
sdt lada putih
sdt lada hitam
1 sdt tepung maizena/tapioka
Pembungkus nasi Vietnam / bungkus lumpia (14 pcs)
Daun selada (14 pcs)
Kemangi Thailand (7 tangkai)
Pilihan
50 – 100 gr bihun (bee hoon)
Herbal lainnya - mint, ketumbar, perilla

10 g telinga kayu / kulat hitam
30 g mi kaca
4 ulas bawang putih (20 g)
50 g lobak merah
50 g ubi kayu
minyak untuk menggoreng
Sos pencicah (rujuk video sos pencicah)
1 sudu besar sos ikan
½ sudu kecil lada putih
¾ sudu kecil lada hitam
1 sudu kecil tepung jagung/ubi kayu
Pembungkus nasi Vietnam / pembungkus spring roll(14 pcs)
Daun salad (14 keping)
selasih Thai (7 tangkai)
