Cucumber and green apple salad with lime juice and honey dressing

This simple flavour packed salad is easy to make and has the most common and easy to find ingredients.

Ingredients:

2 cups sliced cucumber [sliced into matchsticks]
One green apple thinly sliced
½ cup chopped roasted peanuts [any nuts of your choice]
2 tablespoons lime juice
2 to 3 tablespoons honey
2 teaspoon olive oil [optional]
1 to 2 teaspoon red pepper flakes [or you can use black pepper powder]
A pinch of salt

Method:

For the dressing

In a bowl combine Lime juice, honey, olive oil, pepper flakes and salt. Whisk together until combined.

Peel and slice the cucumber into thin slices
Wash and dry the Apple.Cut the apple in half then into long thin strips.
Chop the peanuts.
Combine the sliced cucumber and apple in a large bowl. Pour the prepared dressing into the bowl and toss well until combined.
Taste and season with more dressing if needed.
Keep aside for 10 minutes and toss in chopped peanuts.
Before serving drain the liquid and place in a serving bowl.
Plate and garnish with more peanuts.

Note:
You can prepare the dressing in advance.
The ingredients for dressings can be changed according to the spice level.
