Ingredients:

150 g Almonds
100 g Sugar
14 g Water
7 g Unsalted Butter

Glaze

200 g White Chocolate + 20 g Coconut Sprinkles
200 g White Chocolate + 5 g Matcha Powder


First, stir the water 14 g and sugar 100 g together in frying pan over medium heat until the sugar is dissolved, then bring to a boil.

Add the almonds 150 g and cook over high heat, stirring constantly until all of the water evaporates, and the sugar becomes sandy. 


Reduce the heat to medium, and continue cooking and stirring until the crystallized sugar melts and caramelizes. 

Once the almonds are caramelized, add unsalted butter, mix well.

Immediately pour on parchment paper. 

Quickly break apart almonds.

Melt the chocolate in microwave . 

Add coconut sprinkles and mix it together.

Place the almonds in a bowl and pour 1 tsp of the chocolate over them, stirring until coated. 

Repeat this process 5-7 times .

Toss with coconut sprinkles.

Matcha Almonds the same process, just add matcha powder to malted chocolate and mix so well.
