Corn Salad

16 - 22 ounces frozen or canned corn
1/2 - 1 cucumber
1/2 - 1 red bell pepper
1/2 - 1 onion (your choice of red, purple or white)
3/4 - 1 cup Catalina dressing
salt and pepper, optional

Place corn in a medium sized bowl. Cut cucumber, bell pepper and onion into pieces about the size of the kernels of corn. Add the Catalina dressing to the bowl and mix until well combined. Add salt and pepper, if desired.

Cover and refrigerate for 4-8 hours or overnight.

Stir again before serving and enjoy.
