Hi friends, join me today as I go foraging for white pine needles that I use to make tea! This tea is currently very popular, people appreciate it as a source of Vitamin C and a source of Vitamin A. There are several types of pines whose needles one can use for tea, but in my area I only have access to the Eastern White Pine (Pinus strobus). Pine needle tea is sold on the internet but there are not many physical stores that carry it, so I prefer to forage the needles in a nearby forest.

To me most types of pine trees look similar, the Eastern White Pine can be identifed by its needles that grow in bundles of five. Don't forage from pine trees that are exposed to pollution. If you forage from young pine tree, don't take a lot of needles from the same spot. Instead, forage all over the tree so you don't affect its growth.

The Eastern White Pine is native to eastern North America and can be found in Canada as well as in the US and in Europe. Pine needle tea has a long tradition, indigenous North Americans used it and the Europeans that came learned about it and drank it as well. Nowadays a lot of people are rediscovering it because of its nutritional value and medicinal properties. Pine needle tea is especially popular during cold and flu season. If you don't want to use your forage pine needles right away, freeze them for later use. They also can be used for pine needle baths.

Take a handful of pine needles and rinse them. Fill them into a pot. Add about two cups of boiling water and let the pine needle tea steep for 5 minutes which gives a nice intense flavor. If you want the taste to be stronger you can let it steep for 10 minutes.

The tea is colorless and has an intense delicious smell because of the essential oil the needles contain. To me the taste is a bit citrusy, if you forage needles from older trees the flavor of the tea can be on the bitter side which I like too.
