大阪のソウルフード【ジャカルタ進出や！】串かつだるま コロナ禍乗り越え再び海外店舗に挑戦

大阪の串かつチェーン「だるま」は、コロナ禍を乗り越え、再び海外進出！
インドネシアのジャカルタに新店舗をオープンし、大阪の味を現地に広めるための挑戦を取材しました。

現地スタッフへの指導や店舗の準備にトップ自ら関わり、特にイスラム教徒向けに豚肉を除いたメニューや現地好みに合わせた辛いソースを提供しています。初めての視察で会長は、現地の食文化に合わせた価格設定やメニュー改良の必要性を痛感し、さらなる現地適応を目指します。新婚で単身赴任中のスタッフが店長に昇進するなど、現地スタッフの成長も期待されています。今後も大阪のソウルフードをジャカルタで成功させるために、前向きな挑戦が続けられます。

We covered the opening of a new store in Jakarta, Indonesia, and the challenge of spreading the taste of Osaka to the local market.

The top management is personally involved in instructing the local staff and preparing the store, and especially for Muslims, the menu excludes pork and offers spicy sauces tailored to local tastes. During his first visit, the chairman keenly realized the need to improve pricing and menu items to suit the local food culture, and is now working to further adapt the restaurant to the local market. The local staff is also expected to grow, with a newly married staff member working alone being promoted to store manager. Positive challenges will continue in the future to make Osaka's soul food a success in Jakarta.
