Ingredients👇
For the Chicken:
• 350g boneless chicken breast, cut into small pieces
• 2 tsp chili powder
• Salt & pepper, to taste
• ½ tsp cumin powder
• 1 tsp garam masala
• 1 tsp chicken masala
• 2 tbsp curd (yogurt)
• ⅓ tsp oregano
• ½ tsp garlic powder
• ½ tsp onion powder
• 1 tsp ginger garlic paste
• 1 tbsp lime juice
For Cooking the Chicken:
• 1 tbsp coconut oil
For the Rice:
• 160g pre-soaked rice
• 1 tbsp coconut oil
• Salt, to taste
• ½ tsp turmeric powder
• ⅓ tsp oregano
• ½ tsp garlic powder
• 1 small piece raw cinnamon
• ½ tsp chili powder
• 1 tbsp lime juice
• 2 green cardamoms (elaichi)
• 1 bay leaf
• Water (1.5 times the rice, approx. 240ml or 1 cup)
For the White Sauce:
• 1 cup curd (yogurt)
• ¼ cup sour cream
• ¼ cup cucumber pulp
• ⅓ tsp oregano
• ½ tsp garlic powder
• ½ tsp onion powder
• Salt & pepper, to taste
• 1 tbsp lime juice
• Water (as needed to thin the sauce)
For Plating:
• Shredded lettuce
• ½ tomato, diced
• ½ cucumber, sliced
Instructions :
1. Marinate the Chicken:
In a bowl, combine the chicken with chili powder, salt, pepper, cumin, garam masala, chicken masala, curd, oregano, garlic powder, onion powder, ginger garlic paste, and lime juice. Marinate in the fridge for at least 1 hour.
2. Cook the Chicken:
Heat 1 tbsp coconut oil in a pan over medium heat. Add the marinated chicken and cook for 10–12 minutes, stirring occasionally until fully cooked. Remove the chicken from the pan and set aside.
3. Prepare the Rice:
In the same pan, add 1 tbsp coconut oil. First, add salt, turmeric, oregano, garlic powder, raw cinnamon, chili powder, lime juice, green cardamoms, and bay leaf. Allow the spices to infuse the oil for about 1 minute.
Next, add the pre-soaked rice followed by water (approximately 240ml). Cover the pan and cook on low heat for 10 minutes without stirring, until the rice is fluffy.
4. Prepare the White Sauce:
In a bowl, whisk together curd, sour cream, cucumber pulp, oregano, garlic powder, onion powder, salt, pepper, and lime juice. If needed, add water to achieve a pourable consistency.
5. Assemble the Dish:
On a serving plate, layer the cooked rice as the base, then top with the cooked chicken. Add shredded lettuce, diced tomato, and sliced cucumber on top. Drizzle with the white sauce and serve immediately.
