South Indian Style Sambar –

Main Ingredients

Toor Dal – 1 cup (200 g)

Water – 4 cups + 3 cups

Salt – 2 teaspoons + 1 teaspoon (adjust according to taste)

Turmeric Powder – ½ teaspoon

Dry Tomatoes – a handful
OR Tomato – 1 big, chopped

Tamarind Water – ½ cup + ¼ cup (adjust according to taste)

Sambar Masala – 1½ tablespoons


Vegetables

Drumsticks – 2 (cut thin lengthwise into 2-inch pieces)

Yellow Cucumber – ½ cup, chopped

Carrot – ¼ cup, finely chopped

Bottle Gourd – ½ cup, chopped


Tempering / Tadka

Desi Ghee – 1 to 2 tablespoons

Mustard Seeds – 1 teaspoon

Cumin Seeds – ½ teaspoon

Fenugreek Seeds – ¼ teaspoon

Asafoetida (Hing) – ¼ teaspoon

Fresh Curry Leaves – a few

Dry Red Chilli – 1, broken

Red Chilli Powder – 1 teaspoon


Garnish

Fresh Coriander Leaves – a handful, finely chopped
