Fish Stock (Fish Fumet when reduced) is an easy thing to do and it's really worth it! It will lift any White Wine sauce or Beurre Blanc and will give you some extra points with your guests 😉 I prefer to use Turbot bones, I personally think that they give the best taste. All you need to do is to roast the bones, add some aromatics and you are good to go 👍
