1️⃣ Ultra-long fermentation (24–72 hours)

Medieval dough often fermented for days, not hours. This broke down gluten and phytic acid far more completely than modern “overnight” doughs.

2️⃣ Seasonal hydration changes

Bakers adjusted water content based on humidity, temperature, and grain age — not fixed percentages.

3️⃣ Stone-ground, whole grain flour only

Flour included germ and bran, feeding wild yeast and bacteria properly. Modern refined flour starves sourdough cultures.
