Peaches are in season! In this video, I will show you how to make a peach crostata. This Italian free-form pie is easy to make, sweet, tart, and scrumptious. You can enjoy it at room temp or have it warm with a scoop of vanilla ice cream. Either way, it is the perfect sweet bake for the summer. So let's get started!

PIE CRUST INGREDIENTS:

All purpose flour 315g (2 1/2 cups)
Unsalted butter (cold, cubed) 190g (3/4 cup)
Salt 6g (1 tsp)
Whole egg 56g (1 large)
Ice water 68g (1/4 cup)
White vinegar 14g (1 tbsp)


FILLING INGREDIENTS:

Fresh peaches 300g (approx 2 large pcs)
Granulated sugar 35g (3 tbsp)
Cornstarch 2.5g (1 tsp)
Vanilla extract 3g (1/2 tsp)
Cinnamon 1.5g (1/2 tsp)

Egg wash 1 whole egg + 1/2 tbsp milk

Glaze (optional) 1 tbsp apricot jam + 1 tsp hot water


**Notes**
I only used half of the pie dough for my crostata. If you want to make a bigger crostata with all of the pie dough, be sure to double up on the filling.
