Time to drink some liquid history!
This whiskey was originally designed by Irish Whiskey Historian Fionnán O’Connor, who unearthed a lot of old mashbills, or recipes, to discover how Irish people used to make whiskey. Ten of these old recipes were then distilled by the Boann Distillery, and put into 4 different casks, Ex-Bourbon, Ex-Rum, Ex-Sherry and Re-Charred casks.
Those casks were then shared out among other distilleries and brands, with Mashbill Five going to Two Stacks, which they are releasing under their “Polaris” line of limited edition whiskeys.
This is the Polaris 4.1, it has a mashbill of 40% unmalted barley, 30% malted barley and 30% oats, and was matured for years in an oloroso sherry cask. This means we will likely soon see Polaris 4.2, 4.3 and 4.4 featuring those other casks I mentioned earlier.
Interestingly, and in a refreshingly consumer-friendly way, Two Stacks have released this whiskey in full size bottles, and also in 100ml cans, allowing customers who are more budget-conscious (or maybe suspicious of old recipes), a chance to try it out without committing to a full bottle.
It’s natural colour, non-chill filtered and comes in at 57%ABV, so let’s dive in!
Two Stacks Polaris 4.1 Tasting Notes:
Nose:
It's nicely sherried on the nose, with biscuity notes, baking spices and creamy oats. There's a bit of fudge too, with some orange citrus notes and some dark cocoa powder
Palate:
The palate is really rich, with oak, leather and cigar box notes. It's almost smoky, but has sweetness, spice and a creamy character that keeps it rounded.
Finish:
The finish just goes and goes, with the earthy notes fading slowly and some cocoa notes lingering on.
Overall, this is a meaty, rich and heavy whiskey, with enough sweetness, creaminess and fruit to keep it from being overpowering. It definitely benefits from a few minutes in the glass to breathe, to let those lighter notes come more to the fore, but as they do, you get a really unique experience.
