I’ve been hooked on finding new ways to turn one store-bought chicken into four completely different meals. This week, I’m back with four new recipes...no bacon this time, but still packed with flavor, shortcuts, and serious weeknight comfort.
These meals are low-effort, budget-friendly, and built to use overlapping ingredients to keep costs down. Everything is easy to prep and satisfying enough to feel like a real dinner, even on your busiest days.
Here’s what I made this week:
Meal 1: Fully Loaded Buffalo Chicken Mac & Cheese
This one’s bold and unapologetically indulgent. I cooked up a box of store-brand mac and cheese, then stirred in shredded rotisserie chicken and a small bottle of buffalo sauce. I topped it with shredded cheese and broiled it until golden and bubbly. Finished it off with a drizzle of buffalo and ranch for a fun, spicy comfort meal that’s ridiculously easy and satisfying.
Meal 2: Chicken Pesto Provolone Paninis
Inspired by the Starbucks panini but way cheaper. I used a couple of budget-friendly sub rolls, spread on some jarred pesto, added roasted red peppers, carved rotisserie chicken breast, and provolone cheese. Toasted them in the toaster oven until crisp on the outside and melty on the inside. These come together in under 10 minutes and feel like something you'd order at a café. I served them with canned soup for a super fast, filling dinner.
Meal 3: Shortcut Chicken Enchilada Skillet
For this one-pan meal, I sautéed half an onion, then added canned corn, black beans, and enchilada sauce. I simmered the rotisserie chicken quarters right in that mixture until tender, then shredded the meat and stirred it back in. Tossed in a couple of cups of tortilla chips and topped it all with shredded cheese. A great way to get that enchilada flavor without having to turn on the oven!
Meal 4: Creamy Chicken & Gnocchi Soup
This is my shortcut version of the Olive Garden classic. I made a quick broth using the rotisserie chicken carcass, then picked off the rest of the meat. In a stock pot, I sautéed the other half of the onion, made a quick roux with flour, then added in 4 cups of the prepared stock and a can of evaporated milk. I seasoned it with salt, pepper, Italian seasoning, and red pepper flakes, then stirred in shelf-stable gnocchi and let it simmer until the gnocchi floated. Finished it off with the shredded chicken and a handful of chopped spinach. It’s creamy, comforting, and perfect with breadsticks for dipping.
