Know how you can make an easy lunch box dish with Beetroot Paratha for kids or adults without stuffing.

Ingredients:

Grated Beetroot - 2 Cups or 1 Big-sized Beetroot
Red Chilli Powder - 1 & 1/2 tsp
Salt - 1 & 1/2 tsp
Cumin Powder - 1/2 tsp
Coriander Powder - 1/2 tsp
Turmeric Powder - 1/4 tsp
Garam Masala - 1/2 tsp
Kasoori Methi or dried Fenugreek Leaves - 1/2 tsp
Wheat Flour - 3 Cups
Ghee/Clarified Butter - 1/4 tsp to 1 tsp


Ingredients for Masala-Based Curd:

Curd - 1/2 Cup
Salt - 1/8 tsp
Red Chilli Powder - 3/4 tsp
Cumin Powder - 1/8 tsp
Chat Masala - 5-6 Pinches

Method:

1. Let's cook the Beetroot. Place a stand inside the cooker and add water. Add the grated Beetroot inside the vessel. Add a little amount of water. I grated a big-sized Beetroot for this recipe. Approximately it is 2 cups. You have to steam this grated Beetroot. So, I am using a small steel glass instead of a whistle and steaming it on a medium flame for about 8-10 minutes. If the Beetroot cooks more, its colour will suffer. Once you see the steam coming out from the sides of the glass, switch off the flame. Alternatively, you can cook the Beetroot in a microwave oven for 6-7 minutes. Allow the cooked Beetroot to cool.

2. Once it is cooled completely, transfer it to a mixer jar and grind it to a smooth paste. Transfer this ground paste to a big mixing bowl.

3. To this ground Beetroot, add 1 & 1/2 tsp of Red Chilli Powder, 1 & 1/2 tsp of Salt, 1/2 tsp of Cumin Powder, 1/2 tsp of Coriander Powder, 1/4 tsp of Turmeric Powder, 1/2 tsp of Garam Masala, 1/2 tsp of Kasoori Methi or dried Fenugreek Leaves. At this stage, you can add 1 tsp of Lemon Juice as well. Mix everything well.

4. Add the Wheat Flour. For this measurement of Beetroot, you need 3 cups of Wheat Flour. Add the Wheat Flour in batches and mix and knead the flour. If the Beetroot paste is watery, then you need to add more Wheat Flour. Once done, add 1/4 tsp of Ghee to the dough and mix. This will help to keep the dough moist. Make sure to let the dough rest for at least 30 to 45 minutes.

5. Let's prepare the masala-based curd as a side dish for Paratha. Add 1/2 cup of Curd to the bowl. Add 1/8 tsp of Salt, 3/4 tsp of Red Chilli Powder, 1/8 tsp of Cumin Powder, 5-6 pinches of Chat Masala. Mix all these ingredients with the help of a spoon or a whisk. If you feel the spice and salt are less, add and adjust the taste accordingly. Serve this curd with Beetroot Paratha.

6. The dough has rested for an hour. It has turned out soft. Let's roll the Beetroot Paratha. I have taken a ball-sized dough. Dip the dough ball in the dry flour. It should not be too thick or too thin. Roll it a little thicker than Chapati.

7. Pre-heat the Tawa. Slowly drop the prepared Paratha on the hot Tawa. Turn over and cook both sides. Once bubbles start to appear on the Paratha, add the ghee or clarified butter. Cook on a medium flame. Add the ghee on both sides and cook the Paratha. While cooking the Paratha, it is normal to see brown spots on the Paratha. Once done transfer to a plate and continue with the remaining dough.

Beetroot Paratha is delicious, and kids will love to eat it too. Serve this Beetroot Paratha with the masala curd prepared earlier.
