Red Velvet Cake with my favorite Ermine frosting ♥️
Usually paired with Cream Cheese frosting, though traditionally it was served with Ermine frosting/Boiled milk frosting. The Combination is Delicious!

Ermine frosting is not as sweet as the American Buttercream but still stiff enough and also not as heavy as Cream Cheese frosting but still creamy. It's made with easily available ingredients at home.

Recipe 👇

INGREDIENTS for the CAKE
2 3/4 cup (344gms) all-purpose flour
6 Tbsp (16g) cornstarch
2 Tbsp cocoa powder unsweetened
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (115g) unsalted butter, softened to room temperature
2 cups (400g) granulated sugar
1 cup (240ml) vegetable oil
4 large eggs, room temperature
1 Tbsp pure vanilla extract
1 teaspoon distilled white vinegar
2 Tbsp gel red food coloring (color qty will vary based on the brand you purchase)
1 cup (240ml) buttermilk, at room temperature

Recipe for the Ermine frosting:
INGREDIENTS
10 Tbsp All Purpose flour
2 cups of full fat Milk(full fat is best but works with 0%fat too)
11/2cup of Superfine Sugar (you can reduce upto 1/2 cup and increase based on your preference)
1 Tbsp Vanilla Extract
1/2 tsp Salt
454gm | 2 Cups Unsalted Butter

The above Frosting should be enough for covering and decorating a two layer 7/8/9inch cake.


METHOD
Whisk the flour, cornstarch, cocoa, baking soda, and salt together in a large bowl. Set aside.

Beat the butter and sugar together on medium speed until combined and color turns light about 1 minute.

Scrape down the sides.

Add the oil, eggs one at a time, vanilla extract, and vinegar and beat again.

Add the dry ingredients in 3 additions alternating with the buttermilk ending with the flour.

Add your food coloring just until combined. I used 1Tbsp of gel food coloring to get bright red color. Avoid liquid food colors as they don't work well with cakes.

Do not overmix to avoid cracks on top.

Pour the batter into either two 7/8/9 inch cake pan or a single pan filling halfway.

Bake the cake at 180°c for 50-55 mins or till toothpick comes clean.
