Although I am already in full-on mourning when it comes to the end of summer (which officially happens this week), I am also celebrating the beautiful bounty of produce I have enjoyed all summer long. It seems that all the fruits and vegetables are just a little sweeter now, as if they're putting their best foot forward for that one last hurrah! And for me cherry tomatoes win the award for effort.

Growing up I remember we always had tons of cherry tomatoes around this time. My dad loved to plant the garden full of tomatoes--and cherry tomatoes always did so well. We'd have so much surplus that we would have to either give them away or come up with many ways to use them. That's when I created this lazy summer recipe. I roast cherry tomatoes (with garlic, red pepper flakes, balsamic vinegar, and olive oil) in the oven to create a simple, sumptuous sauce that's sweet, savory, and very pleasing served on linguine. And the addition of fresh herbs (parsley oregano, and basil) and fresh cheese (ricotta salata) truly awaken the dish!
