Birria Tacos
INGREDIENTS:
4Ibs of Boneless Beef chuck roast
2Ibs of Beefshort ribs
5 Ancho chiles
5 Morita chiles
7 Guajillo chilis
Medium yellow onion(sliced quartered)
8 Roma Tomatoes( sliced Quartered)
12 garlic cloves minced
Corn tortillas
Shredded Oaxaca cheese or mozzarella cheese
2 Tbsp of All spice (whole)
1 Tbsp of Cloves(whole)
2Tbsp of Whole black pepper
2Tbsp of Coriander seed(whole)
(Blend the spices that are (whole) together)
2Tbsp of Mexican Oregano
2Tbsp of cumin
4 bay leaves
Season with Adobo seasoning, Garlic salt & onion powder (to your desired taste)
2 cups chicken broth, 2 cups beef broth and 2 cups of water



DIRECTIONS: For your peppers, cut the stems off and remove the seeds and set aside. Season your meat with garlic salt, onion powder, Adobo seasoning, slap ya mama seasoning and cumin. Then Cut your Beef chuck up into small square sized shapes. Then pour 5 Tbsp of oil in a huge pot on medium high heat and sear your Beef chuck and short ribs. Once seared remove from pot and add your Roma tomatoes, onions and minced garlic. Sauté for 5 minutes then add your seared meat back in the pot with the tomatoes, onion and garlic. Next add 2 cups of chicken broth, 2 cups of beef broth and 2 cups of water or just enough to cover your meat. Then add your peppers to the pot and cover and let it simmer until peppers are tender. Once peppers are tender remove from pot along with tomatoes and onion and blend in a blender with 1 cup of the broth. After blended, strain the sauce in a bowl and pour the sauce back in the pot over your meat. Next add your bay leaves and the spice mixture you blended and the rest of the seasonings and cover and let it cook for 3 hours on medium low heat. Once meat is done shred it apart and season with above seasonings to your desire. Put the meat back in the pot and assemble your tacos. In a cast iron skillet on medium high heat, dip your corn tortilla in the birria sauce and cook it in the skillet. Add a layer of cheese and birria meat to the tortilla and fold like a taco once tortilla is seared on each side and serve with the consomé sauce, limes and onion& cilantro. Enjoy!
