This is an easy and yummy sauce that can be made in a big batch for multiple meals. I chopped up half a head of cauliflower, a box of crimini mushrooms, a whole zucchini, a couple tomatoes plus a can of whole tomatoes, a cup of chickpeas (garbanzo beans), and a whole tub of spinach. You can cook this with some high heat vegetable oil or you can use a thin layer of water instead of the oil to cook with, you just have to keep adding a little water at a time to prevent burning. For spices, I added oregano, basil, and red chili flakes to give it an Italian flavor and a little spicy heat. Since the can of tomatoes have sodium already added, and the spinach has some sodium in it too, I did not add any extra salt. You can eat this with whole grain pasta or brown rice to make a well-balanced meal with tons of fiber, vitamins, protein, and some carbs in whole-grain form.
