A rite of passage, when in Amritsar, is to dine at Kesar Da Dhaba, a 105-year-old vegetarian eatery located in the bylanes of Bomba Wala Khoo in the old city. I stepped into their kitchen to find ancient cauldrons simmering with their must-try black dal slow-cooked over 12 hours, vessels bearing a bevy of vegetarian dishes - palak paneer shahi paneer, baingan ka bharta et al., enormous tandoors presided over by ruddy cooks slapping out a parade of paranthas - take your pick from laccha or stuffed, aaloo or gobi - and a unique ghee ka tadka counter, where every dish that troops out of the kitchen is topped with a generous, sizzling lashing of molten, spiced desi ghee!
Suffice to say, a Kesar Da Dhaba meal isn't for those counting calories. When here, soak up the ‘makhan’ and ‘gheo’ in the spirit of the land. Happy eating!
