Typically this is made with a steamer. If you see any recipe for Chinese Sticky Rice made in a rice cooker...AVOID IT! It will come out horrible. Try this easy foolproof recipe. If you have a steamer, simply steam the no mi fan with no seasonings, then proceed to cook the sausage/mushrooms/dried shrimp with the steamed sticky rice until combined. When the #coronavirus hit, all my favorite dim sum tea house shutdown. I had a deep and urgent craving for sticky rice. Good news - I'm going to share that recipe with you. This process is almost like stirfrying, but with a steamer. Also, measurements are approximate and feel free to adjust according to your tastes.

2 cups uncooked sticky rice (also known as “Sweet Rice” or “Glutinous Rice”)
1 tbsp oyster sauce
1 ½ tbsp soy sauce
2 tsp dark soy sauce
¼ tsp sesame oil
¼ cup chicken stock
½ tsp salt
2 tbsp oil
¼ cup dried shrimp, soaked for 15 minutes in warm water
1 medium onion, finely diced
5 dried black/shiitake mushrooms, soaked in warm water until softened and diced
4 links Chinese sausage, cut into small discs
1 tsp Shaoxing wine
white pepper, to taste
2 scallions, chopped (garnish)
