Katori Chaat

Ingredients for Katori Preparation:
All-purpose flour 3 cups
Cumin seeds 1 tbsp
Salt 1 tsp
Oil 2 tbsp
Water as required
Oil (for frying) as required
Small steel bowl 1

Ingredients for Green Chutney:
Green coriander 1/2 cup
Mint leaves 1/4 cup
Green chilies 2-3
Cumin seeds 1 tsp
Salt 1/2 tsp
Water 2 tbsp
Nestlé MilkPak Yogurt 1 pack

Ingredients for Imli Chutney:
Tamarind pulp 1 ½ cup
Sugar 1/2 cup
Chaat masala 1 tsp
Black salt 1/2 tsp
Red chili powder 1/2 tsp
Salt 1/2 tsp
Slurry (all-purpose flour 1 tbsp + water 1/4 cup)

Ingredients for Assembling:
White chickpeas 2 cups
Potato cubes (boiled) 1 cup
Tomatoes (chopped) 1 cup
Green chilies (chopped) 2-3
Onion (chopped) 1 cup
Green coriander 1/2 cup
Chaat masala 1 tbsp
Lemon juice 2 tbsp
Prepared katori
Green chutney as required
Imli chutney as required
Chaat masala as required
Nestlé MilkPak Yogurt as required
Pomegranate as required
Sev as required

Directions for Katori Preparation:
1. In a bowl add flour, salt, cumin seeds, water and knead a soft dough. Cover it with cling film and Let it rest for 15-20 mins.
2. Now take the prepared dough and divide it into 8 equal parts. Roll out each part into flat circle with a rolling pin.
3. Now place a steel bowl on the dough and wrap the dough around the bowl properly. Cut the extra edges.
4. Now deep fry the katori wrapped dough until golden brown and crispy. Remove the bowl from the dough and invert the katori on the oil. Deep fry it from the inside of the katori and set aside.
Directions for Green Chutney Preparation:
5. In a jar add green coriander, mint leaves, green chilies, cumin seeds, salt, water and blend it well.
6. In a bowl add Nestlé MilkPak Yogurt and 2 tbsp of prepared chutney. Mix it well and set aside.
Directions for Imli Chutney Preparation:
7. In a pan heat tamarind pulp, sugar, chaat masala, black salt, salt, red chili powder and cook for 1-2 mins.
8. Add slurry and cook until it thickens. Set aside.
Directions for Assembling:
9. In a bowl add chickpeas, potatoes, green chilies, onion, green coriander, chaat masala, tomatoes, lemon juice and mix it well.
10. Take the prepared katori and add this chana chaat in it. Drizzle mint raita, imli chutney on it and garnish it with pomegranate and sev.
11. Your Katori Chaat is ready. Serve and enjoy.

Cooking time: 20-25 mins
