Ingredients for Navratan Korma Recipe:

(Tsp-Teaspoon; Tbsp-Tablespoon)

Sautéing Vegetables:
- Cauliflower florets- 1 cup (75 gms)
- Carrots, sliced- 1 cup (75 gms)
- Green Peas, shelled- 1/2 cup (75 gms)
- Beans sliced- 3/4 cup (75 gms)
- Potato, sliced- 1 big (90 gms)
- Salt-1 tsp
- Turmeric Powder- 1/2 tsp

Onion-Cashew Paste:
- Fried onions- 2 medium (130 gms)
- Cashew nuts- 12

Tempering:
- Shahjeera- 1/2 tsp
- Green Cardamom- 4
- Cloves- 4
- Cinnamon- 4 pieces
- Black Peppercorns- 8

Spice Powders:
- Kashmiri Chilli Powder- 1 tsp
- Coriander Powder- 1/2 tsp
- Cumin Powder- 1/2 tsp
- Kasuri Methi Powder- 1 tsp
- Garam Masala Powder- 1/4 tsp

Other Ingredients:
- Ghee-4 tbsp
- Green Chillies, chopped- 2
- Ginger Garlic paste- 1.5 tsp
- Tomato purée- 3 tbsp
- 5 cashews halved and fried
- Raisins (Kismis)- 15-20 halved & fried
- Pomegranates (Anaar dana)-1/2 cup
- Coriander leaves, fine chopped- 3 tbsp

Process:

- Heat ghee and then add the tempering.
- Once it splutters, add the sliced carrots, beans & potato.
- Fry on medium heat for 3 mins and then add the other vegetables. Also add the turmeric & salt, mix & fry on medium heat for 2 mins.
- Now shift the vegetables to make a gap in the center and add chopped green chillies & Ginger garlic paste. Mix and fry for 2-3 mins on low heat.
- Now add the Fried onion-cashew paste, mix and fry on medium heat for 2 mins.
- Next add the tomato purée, Kashmiri Chilli Powder, Coriander & Cumin powder and fry on medium heat for 5 mins.
- Add 150 ml water and cover & cook on low heat for 5 mins
- Now add the fresh cream, Garam Masala powder & roasted Kasuri Methi powder. Mix and simmer for 2-3 mins
- Now add the cubed paneer, fried cashew, raisins, pomegranates & chopped coriander. Give a mix and simmer for 2-3 mins.
- Serve with Naan, Paratha or Rumali Roti.
