Ghevar Ingredients:
-For Sugar Syrup:
1/2 cup of sugar
1/2 cup of water
1/4 tsp of saffron strands
1/4 tsp crushed cardamom
-For Batter:
2 tbsp Desi ghee
4-5 ice cubes
1 cup all-purpose flour
1 tbsp gram flour
2 cups chilled water
-For Frying and Garnishing:
3 cups of deși ghee
Laccha Rabri
Chopped Almonds, Pistachios, & Silver Vark, Rose Petals
1 tsp lemon juice

Step-by-Step Process to make Ghewar:-
0:32: Make the Sugar Syrup: In a saucepan, combine sugar and water. Melt the sugar over low heat, stirring constantly. Once melted, add saffron and crushed cardamom. Cook on a medium flame for 7-8 minutes until a perfect syrup is formed.
1:07: Prepare the Ghevar Batter: In a large bowl, whisk 2 tablespoons of melted ghee and the ice cubes in a circular motion until the mixture becomes butter-like. Gradually add the all-purpose flour and gram flour, mixing well. Slowly add the chilled water in two batches, whisking to ensure there are no lumps. Finally, stir in the lemon juice and sieve the batter to ensure it's completely smooth. Pour the batter into a sauce bottle.
3:20: Fry the Ghevar: Heat 3 cups of desi ghee in a pot. Once the ghee is hot, pour the batter into the center of the pot in a thin, continuous stream. The batter will bubble and spread. Let the foam settle, then pour more batter in the center. Use the end of a spoon to create a hole in the middle. Continue this process until the ghevar is cooked and has a honeycomb-like texture. Repeat for additional ghevar. Let them cool off for half an hour.
4:03: Finish the Ghevar: Pour the prepared sugar syrup over the ghevar. Pour the Rabri over the Ghevar. Garnish with chopped almonds, pistachios, silver vark, and rose petals. Serve and enjoy!
