Super Rich Fruit Cake for Christmas (following Amy Beh's version)

An Advance Merry Xmas wish to all of you.
Fruit Cake is a traditional cake dated back to Roman times
and is serve during Wedding or Christmas time.

It is mostly made of dried fruits soak in liquor or fruit juice.

Ingredients

180gm sultanas
120 gm golden raisins
75 gm cranberries
70 gm orange peels
45 gm figs, chopped

300gm mixed fruits
110g crystallised melon , chopped
60g dried apricots, chopped
85g red and green glazed cherries, quartered

30g honey
125ml-175ml or 1/2 to 3/4 cup brandy
260g unsalted butter, softened
125g gula Melaka (brown sugar)
1 tbsp molasses (omit if using gula Melaka)
1 tbsp vanilla essence
50g semolina
5 eggs , grade B at room temperature
125g almonds, silvered or sliced

200g all-purpose or plain flour
50g self-raising flour
1½ tsp mixed spice
1½ tsp ground cinnamon
¼ tsp salt (omit if using salted butter)
3 tbsp brandy for brushing baked cake

Method
Macerate fruits for 2 days with brandy and honey
cream butter and sugee flour for about 4 mins
Add sugar, cream for about 10 mins or until creamy
stir in 1 egg at a time and cream after each addition
Add in vanilla essence
mix for few minutes
fold in flour alternate with mixed fruits
filled into baking trays , 2 x (9"x4"x3.5") and 1 x (8.5"x4.5"x2.5")
level the cake and dropped /tap 3 times
sprinkle with silvered almonds
bake 150C / 300F for 1.5 hours (cover after 1 hour with tin foil)
remove and brush with brandy , cover with tin foil for 30 mins
