This award-winning brewpub has been hitting home run after home run 🍺 So what’s their secret?

Bob Kunz, founder and head brewer at Highland Park, brings his passion and creative spirit to crafting excellent beers. Known for pioneering the original West Coast Pilsner, Bob shares his love for brewing with lager yeast. “I love lager fermentation for both our ales and our lagers,” says Bob.

“SafLager™ W-34/70 works perfectly in our beers. In our clean lagers, it gives this fresh marshmallow, pillowy characteristic. Then in our more hop-forward beers, the yeast contributes this thiol-y tropical passionfruit sort of characteristic. So, it's a highly versatile yeast for us.”

After Bob started brewing with active dry yeast, he never looked back. The consistency of SafLager™ W-34/70 allows Bob and his team to home in on their recipes, making “micro innovations” to continually better their brews.

In 2024, Highland Park won gold at the Great American Beer Festival (GABF) for their American-style IPA and Contemporary American-style Lager. The kicker? Both beers were brewed with the same yeast: SafLager™ W-34/70.
