*Egg salad is a simple dish consisting of chopped hard-boiled eggs mixed with mayonnaise, mustard, and various seasonings, often including celery and other vegetables. It's a classic, versatile dish, popular as a sandwich filling or a side dish.

Ingredients
1 dozen eggs
1 tomato
1/2 serrano or jalapeño
2 Tbsp finely chopped pickled jalapeños
1/4 of a small onion
2 Tbsp purple onion
Small bunch of cilantro
2 Tbsp pickled jalapeño juice
1/2 cup mayonnaise
1/2 tsp black pepper
1/2 tsp salt
Serve as a sandwich, lettuce wrap, with crackers, or as is 😋
