How to Make Storable Pickle Recipe | Megha Veg Delights
Ingredients:
Turnip (1 medium)
Cauliflower (1 small)
Carrot (1 medium)
Ginger (1-inch piece)
Garlic (4-5 cloves)
1 cup white vinegar
¼ cup mustard oil
1 teaspoon rai (mustard seeds)
Salt (to taste)
1 teaspoon red chili powder
½ teaspoon turmeric powder
2 tablespoons jaggery

Instructions:

1. Prepare the Vegetables :
Wash the turnip, cauliflower, and carrot thoroughly.
Cut them into small, bite-sized pieces.

2. Melt the Jaggery :
In a saucepan, combine jaggery and 1 cup of white vinegar.
Heat gently on the stove until the jaggery melts completely in the vinegar. Set aside.

3. Make the Ginger-Garlic Paste :
In a blender, make a smooth paste of ginger and garlic. Set aside.

4. Cook the Vegetables :
In a pan, heat ¼ cup of mustard oil over medium heat.
Add the rai (mustard seeds) and let them splutter.
Add the ginger-garlic paste and sauté until it turns golden brown.

5. Combine Everything :
Add the chopped turnip, cauliflower, and carrot to the pan.
Mix well and sauté for a few minutes.
Add salt, turmeric powder, and red chili powder. Stir to combine.
Pour in the vinegar and jaggery mixture, and mix everything thoroughly.

6. Finish :
Turn off the flame and let the pickle cool.
Once cooled, transfer the pickle to a clean, airtight jar.

7. Serve :
Your storable pickle is ready! Enjoy it with meals or as a side dish.

Note : This pickle can be stored in the refrigerator for several weeks. Enjoy the tangy, sweet, and spicy flavors!
