General Santos City (GenSan) Mindanao, Philippines: the surprising sushi tuna capital of the world.

Recently I got to explore Mindanao, the Southernmost island of the Philippines, which I was surprised to discover is the Yellowfin Tuna Capital of the world. General Santos City, or GenSan to locals, has 6 fisheries which pull in over 5 million tons of Tuna a year. Most of the sushi grade tuna you eat, in fact, most of the sushi grade tuna eaten around the world, actually comes from GenSan and not Japan. Recently one Fisherman won the Guiness Book of World Records for largest Tuna ever caught, over 33 metric tons.

It's an amazing place to be able to visit, to see fishermen hauling these huge, beautiful beast into the market, where buyers test the fish by thrusting a rod into the sweet flesh to see its quality. Keep in mind these fish sell for upward of 3 million dollars.

One other interesting thing I learned is that all sushi is in fact frozen. All fish are frozen in order to kill any parasites that might be present. So there really is no such thing as "fresh sushi". Who knew?
