CAUTION: BE VERY CAREFUL when adding the Cognac, add it to the pan off the heat, put the bottle down and carefully return the pan to the stove where it will ignite. Be patient as the alcohol burns off, then slowly swirl the pan as the flame goes out, it happens quickly.
