Udit dal : 1/2 kg
Moong dal : 1/2 kg
Papad khara : 50 gm
Salt : 50 gm
White paper / black paper : 10 - 15 gm
Hing : 5 -10 gm
Water for kneading

Step :
1. Prepare Urad Dal and moong dal flour and sift it using a fine sifter , I suggest to grind 10-15 gm more , for dusting and all
2. Once you done sifting measure both the flour as given above. Then grind pepper , salt , asafetida , Papad khara roughly
3. Mix it in the measured flour mixture , use little water as required to knead a tight dough
4. Keep the dough aside for 1 -2 hours
5. After 1-2 hour take the dough and apply little oil and start kneading.
6. You can follow stretching method, or use traditional hammering methods to loosen up the dough
7. Once dough is nice soft and stretching , apply oil and prepare roll of 1 n half inch
8. Then cut it in the required size and prepare balls for rolling our the Papad
9. Once you cut the balls apply nice oil on them and keep them covered in the airtight bag
10. Keep it aside for 1 hour then start preparing papad
11. For preparing papad , you will need papad roller , the dusting flour and plain non sticky clean platform
12. Take one ball , roll it like puri first dust it in the flour , and roll it nice thin and even
13. Make sure to roll it as thin as possible and make sure to roll its edges as well
14. The papad is so thin , transparent, you are able to see my fingers though it
15. At a time you can roll 10-15 papad , stack them on each other and then take them for spreading and drying
16. Do not stack for long time else they will stick together
17. Once you roll 10-15 papad cake them for spreading ,for drying the papad you need cotton cloth , spread the cotton cloth then spread papad on them evenly
18. Make sure to dry papad in shades (indoor ) , once you prepare all the papad cover them with thin cotton sheet , so that papad will not shrink or fold
19. Next day remove the cover and let it dry open , once papad is nicely dry for 2 days , you can collect them and can store then airtight container for years
You can eat this papad as fried or roasted
If papad is not dried , you can again spread them and let it dry in shade
To avoid any fungus or insect , microwave whole bunch of papad for 30 sec.let it cool down then again store them in airtight container
