I was inspired by @Airam’s Vegan Vida on YouTube to make out my vegan Birria tacos. I re-created this recipe and included some chipotle salsa and used corn & wheat tortillas.

Birria:
(7) Guajillo Peppers (You can purchase the Guajillo, Pasilla, and Chile de Arbol Peppers from your local Spanish market)
(1) Pasilla Chile Pepper (Gives a nice smoky taste and flavor to the Birria)
Tear off stems from both the Guajillo and Pasilla peppers. De-vein the peppers by removing the seeds and placing them into a bowl
Place the peppers into a pot and add enough water to cover the top of the peppers. Boil until soft and rip (For about 10-12 minutes)
Your water will change to a reddish-orange cooking liquid
After they have soften, place the soften peppers into blender
Add ½ cup of cooking liquid leftover in the pot from boiling the peppers
Add (5) garlic cloves
1 Teaspoon of black pepper
½ Tablespoon of Oregano
1 bay leaf or ½ tablespoon crushed bay leaves
1/3 cup white vinegar
Blend all ingredients for (2) minutes

Jackfruit:
Use (3) cans of Jackfruit in brine (I purchased Trader Joe’s, but you can use any brand)
Pour Jackfruit into strainer; rinse thoroughly with cold water as you want to rinse off brine. You can leave the seeds in the Jackfruit as you will be able to use all of it to cook out your Birria meat
Place in a pot of water for an hour so you can cook out the brine
Take boiled Jackfruit and place back into strainer and rinse for the 2nd time
Repeat process and boil Jackfruit for another hour as it will turn pinkish green and will be nice and soft
Drain hot water. Set to the side for 5-10 minutes until cooled off. Use paper towel to dry blot Jackfruit
Take Jackfruit in hands and squeeze together (Using gloves is optional), ensuring you have removed all moisture until it is dry. The Jackfruit will take on the delicious flavors of the Birria sauce
Follow remaining of recipe within my video to cook out your Jackfruit, accordingly

Consomme (Dipping Sauce for Birria Tacos):
Take 25 Chile De Arbol peppers (Or less depending on your tolerance for heat) and place into blender
½ cup of water
1 Teaspoon of Pink Himalayan Salt
1 garlic clove
Puree for two minutes into blender, until smooth
Once Birria tacos are finished, add diced onions and cilantro to consommé in a cup. Drizzle light olive oil and adding chipotle salsa is optional. Prepare to enjoy your dipping sauce! :)
