Join us here at Fox Hallow Kitchen as we bring you a fun take on one of your favorite desserts that will give you some "pep" in your step. Minty fresh and so so tasty.


Chocolate Peppermint Gobs__

Gobs:
4 cups flour
2 cups sugar
1 cup cocoa
½ cup shortening
1 Tbsp vanilla
1 Tbsp baking soda
½ tsp baking powder
½ tsp salt
(½ tsp crushed peppermint leaves, optional)
2 eggs
1 cup sour milk
1 cup boiling water
Filling:
4 cups powdered sugar
1 1/3 cup shortening
2 cups marshmallow creme
3 Tbsp milk
½-1 tsp peppermint extract
about 12 candy canes, crushed

Cookies:
• Preheat oven to 375°. Line baking sheets with parchment paper.
• Combine all ingredients in a bowl, with the boiling water last.
• Scoop about 1½ Tbsp at a time onto prepared baking sheets. Bake for 10-13 minutes or until a toothpick comes out clean.
• Let cool completely.
Filling:
• Combine all ingredients except the candy canes in a large mixing bowl. Beat with an electric mixer until smooth.
Assembly:
• Pair up the cookie halves according to size.
• Using a piping bag with a large round tip, spread filling all the way to the edge of one cookie. Sandwich with the other half.
• Put the crushed candy canes in a plate and roll the edges of the cookies in the candy.
