🟢材料:
魚頭 1個
麵豉醬 2湯匙
薑、蔥、蒜頭、辣椒 適量
糖 1½茶匙
澱粉 1茶匙
蒸魚豉油、胡椒粉、油 適量

🟢做法:
1️⃣ 爆香蒜蓉,轉小火後加入麵豉醬爆香,加入1茶匙糖拌勻盛出,放涼備用。
2️⃣ 將魚頭清洗乾淨,吸乾水,放少許胡椒粉、爆炒過的蒜蓉和麵豉醬、薑絲、½茶匙糖、1茶匙澱粉、蔥和少許油醃5分鐘,喜歡吃辣的可以加些辣椒。
3️⃣ 水滾下鍋,大火蒸8分鐘,如果家庭火力不夠猛可以蒸10分鐘,出鍋撒上蔥花,淋上熱油和少許蒸魚豉油即可。

🟢Ingredients:
Fish head - 1 piece
Salted fermented soybean sauce - 2 tbsp
Ginger, spring onion, garlic, chili - as needed
Sugar - 1½ tsp
Cornstarch - 1 tsp
Steamed fish soy sauce, white pepper powder, oil - as needed

🟢Cooking Directions:
1️⃣ Sauté garlic until fragrant, then turn to low heat and add salted fermented soybean sauce sauté until fragrant. Add 1 teaspoon of sugar, mix well, and set aside to cool.
2️⃣ Clean the fish head and pat dry. Marinate with a little white pepper powder, sautéed garlic and salted fermented soybean sauce, ginger, ½ teaspoon of sugar, 1 teaspoon of cornstarch, spring onions, and a little cooking oil for 5 minutes. Add some chili if you like spicy food.
3️⃣ Bring water to a boil and steam the fish head over high heat for 8 minutes. If your stove's heat is not strong enough, you can steam for 10 minutes. Once cooked, sprinkle with spring onions, drizzle with hot oil, and a little seafood soy sauce if you like.
