Recipe:
2 cups gluten free all purpose flour
1 tsp salt
2/3 solid all vegetable shortening
8 - 10 tbsp. water

Mix vegetable shortening with a pastry blender in the dry ingredients. Add water until you can make a dough ball. Divide dough into two. Roll out dough between two sheets of parchment paper or wax paper. Place into a 9" pie pan.
